Salmon Dill Salad
When the weather is scorching outside, no one wants to be cooking in a hot kitchen. A nice cold salad hits the spot on a hot summer evening! This salmon salad is easy to make and is extra delicious with a squeeze of tart lemon juice on top.
Ingredients
- 4 cans canned salmon (6 oz each)
- 2 large stalks celery, diced
- 1/4 cup red onion, diced small
- 1/4 cup capers (optional)
- 1/2 – 2/3 cup avocado oil mayonnaise
- 1/4 cup Dijon mustard
- 2 tbsp fresh dill, finely chopped
- 1/2 tsp sea salt
- 1/4 tsp ground pepper
- Fresh lemon juice to taste
Directions
- Drain each can of salmon.
- Mix all ingredients except salmon in a bowl.
- Add salmon and use a fork to mash and combine the salmon into the other ingredients.
- Chill the salmon salad for at least 30 minutes.
- Put salmon salad on a bed of greens.
- Squeeze fresh lemon juice onto the salmon salad and greens.
- Serve with your choice of crackers or crusty bread.
