Salmon Dill Salad

When the weather is scorching outside, no one wants to be cooking in a hot kitchen. A nice cold salad hits the spot on a hot summer evening! This salmon salad is easy to make and is extra delicious with a squeeze of tart lemon juice on top.

Ingredients

  • 4 cans canned salmon (6 oz each)
  • 2 large stalks celery, diced
  • 1/4 cup red onion, diced small
  • 1/4 cup capers (optional)
  • 1/2 – 2/3 cup avocado oil mayonnaise
  • 1/4 cup Dijon mustard
  • 2 tbsp fresh dill, finely chopped
  • 1/2 tsp sea salt
  • 1/4 tsp ground pepper
  • Fresh lemon juice to taste

Directions

  1. Drain each can of salmon.
  2. Mix all ingredients except salmon in a bowl.
  3. Add salmon and use a fork to mash and combine the salmon into the other ingredients.
  4. Chill the salmon salad for at least 30 minutes.
  5. Put salmon salad on a bed of greens.
  6. Squeeze fresh lemon juice onto the salmon salad and greens.
  7. Serve with your choice of crackers or crusty bread.
